A. Ibis Hotels, run by the Accor chain, are in every major city and are reasonably priced. The hotels are all much alike, but very clean and comfortable. http://www.ibishotel.com/gb/home/index.shtml
You could also look at Wotif.com and Last Minute.com. These websites have cut-price hotel rooms which you can book just a few weeks beforehand: http://www.wotif.com.au and http://www.lastminute.com.au
Accommodation at Uluru is a problem simply because it's in the middle of the desert, no township, nothing but the resort. And, while the resort has a variety of accommodation, it's still very expensive. Most people visiting Uluru go with tour groups. This way the trip from Alice Springs (it's 400 kms away) the accommodation, and sometimes meals, is all paid at once and you then don't need to worry about anything.
